BBQ pulled chicken sandwich with coleslaw on soft buns - perfect for parties!
Ingredients:
  • 2 (4 pound) whole chickens, cut up
  • 1.5 cups ketchup
  • 0.75 cup prepared mustard
  • 5 tablespoons brown sugar
  • 5 tablespoons minced garlic
  • 5 tablespoons honey
  • 0.25 cup steak sauce
  • 4 tablespoons lemon juice
  • 3 tablespoons liquid smoke flavoring
  • 12 hamburger buns
  • 3 cups prepared coleslaw
Instructions:
  • In a large pot, submerge the chicken in water and bring to a boil. Simmer until the chicken is tender and pulls off the bone easily, approximately 3 hours.
  • While the chicken cooks, mix together ketchup, mustard, brown sugar, garlic, honey, steak sauce, lemon juice, and liquid smoke in a saucepan. Stir well and season with salt and pepper. Bring to a boil, then simmer for 10 minutes. Remove from heat and let flavors meld while chicken finishes cooking.
  • Move the cooked chicken to a cutting board. Separate the meat from the skin and bones. Cut or shred the meat into small pieces.
  • Combine chicken with the sauce, then gently stir. Heat over medium-low heat for about 15 minutes until the chicken is infused with the delicious BBQ flavor.
  • Place the savory chicken onto the soft buns and generously top with creamy coleslaw.
