Barbecue Chicken Sandwiches

Southern BBQ chicken sandwich with slaw - ready in 20 minutes.
Ingredients:
  • 4 boneless skinless chicken breasts
  • 1/4 cup hickory smoke-flavored barbecue sauce
  • 4 slices (1 oz each) provolone cheese
  • 4 hamburger buns, split
  • 1/2 cup creamy coleslaw (from deli)
Instructions:
  • Preheat gas or charcoal grill. Place each chicken breast between plastic wrap or waxed paper and gently pound with a meat mallet or rolling pin until 1/2 inch thick.
  • 1. Grill the chicken over medium heat for 3 minutes, then flip and brush with barbecue sauce. Continue grilling, covered, for 5 to 7 minutes until chicken is cooked through. Top each chicken with a slice of cheese. 2. Place the buns, cut sides down, on the grill and toast for about 1 minute, covered.
  • Divide 2 tablespoons of coleslaw evenly on each bun bottom, layer with chicken, and sandwich with bun tops.
