Chicken and herb sandwiches

Serve up these irresistibly delicious sandwiches to kick off the festivities!
Ingredients:
  • 1 large barbecued chicken
  • 247.50 gm whole-egg mayonnaise
  • 1 lime, rind finely grated, juiced
  • 1 loaf white sandwich sliced bread
  • 1 loaf wholemeal sandwich sliced bread
  • 80g butter, softened
  • 80g baby rocket, roughly chopped
  • 187.50 ml mixed herb leaves (such as dill, parsley, basil and mint), finely chopped
Instructions:
  • Remove the chicken meat from bones, discarding the skin and bones. Finely chop the chicken and place it into a bowl. Add mayonnaise, lime zest, lime juice, salt, and pepper, then mix until well combined.
  • Start by lining a tray with plastic wrap. Next, lay down 4 slices of white bread on a chopping board. Spread 2 generous tablespoonfuls of chicken mixture on each slice. Place a wholemeal slice of bread on top of each. Lightly spread butter on top, and sprinkle with rocket and mixed herbs. Finish by topping with another slice of buttered white bread and trimming the crusts.
  • Slice each sandwich into 3 finger-sized portions. Arrange them on a prepared tray and cover them with a clean, damp tea towel. Continue until all sandwiches are prepared and refrigerate until ready to serve.
