Create a delicious chicken sandwich with fresh salad, creamy mayo, and soft buns in just 30 minutes!
Ingredients:
  • 4 Flat Buns
  • 2 Australian Chicken Breast Fillets, halved horizontally
  • 2 garlic cloves, crushed
  • 20.00 ml finely chopped oregano
  • 20.00 ml finely chopped basil
  • 1 lemon, zested, juiced
  • 1 red onion, thinly sliced
  • 10.00 gm caster sugar
  • 60ml cider vinegar
  • 100g mayonnaise
  • 20.00 ml finely chopped oregano, extra
  • 20.00 ml finely chopped basil, extra
  • 2 tomatoes, thinly sliced
  • 80g baby rocket leaves
Instructions:
  • In a large bowl, mix together chicken, oil, garlic, oregano, basil, lemon zest, and lemon juice. Allow the flavors to enhance in the fridge for 10 minutes or overnight.
  • Place the onion in a heatproof bowl. Heat sugar and vinegar in a saucepan over medium heat, stirring for 5 minutes until sugar dissolves. Pour the mixture over the onion and allow it to cool.
  • Preheat a barbecue grill or chargrill on high heat. Grill the chicken for 3-5 minutes on each side until fully cooked. Remove to a plate.
  • In a small bowl, mix together the mayonnaise, additional oregano, and extra basil. Drain the onion, and discard the pickling liquid.
  • Place the buns on serving plates. Spread the bottoms with a delicious mayonnaise mixture. Layer with tomato, onion, chicken, and rocket. Season with your favorite seasonings. Finally, cover with the bun tops and serve.
