Quick and easy blackened lemon herb chicken - bursting with flavor for busy weeknights!
Ingredients:
  • 1 cup lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons dried marjoram
  • 4 skinless, boneless chicken breast halves
  • 1 teaspoon vegetable oil, or as needed
  • 1 tablespoon lemon juice, or to taste
Instructions:
  • In a large glass or ceramic bowl, combine 1 cup of lemon juice, olive oil, and marjoram. Add chicken and mix well. Cover the bowl with plastic wrap and refrigerate for 2 hours, stirring occasionally. Remove chicken from marinade and discard.
  • In a hot skillet with vegetable oil, sear chicken until golden and cooked through, about 4 minutes per side. Ensure chicken reaches 165 degrees F (74 degrees C) with a thermometer. Remove from heat and finish with a tablespoon of lemon juice.
