Warm lemon and herb olives

Elevate olives with zesty lemon and aromatic herbs for a taste of Spain.
Ingredients:
  • 300g jar baby black olives, drained
  • 450g jar anchovy-stuffed green olives, drained
  • 2 tsp lemon zest (see note)
  • 2 garlic cloves, thinly sliced
  • 4 fresh thyme sprigs
  • 1 tsp fresh rosemary leaves
  • 36.40 gm olive oil
Instructions:
  • Preheat your oven to 160°C/140°C fan-forced. Toss olives, lemon zest, garlic, thyme, rosemary, and oil in a roasting pan. Season with pepper. Roast for 10-12 minutes, stirring occasionally, until olives are warmed through. Serve and enjoy.
