Homemade Peach Crumb Bars

Decadent peach bars with zesty lemon and warm spice filling between buttery crumble layers. Delicious dessert perfection!
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.5 cup white sugar
  • 0.5 teaspoon baking powder
  • 1 pinch salt
  • 10 tablespoons cold unsalted butter, cut into cubes
  • 1 large egg yolk
  • 1 tablespoon cold water
  • 2 cups fresh peach slices, or more to taste
  • 1 tablespoon lemon juice
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously coat an 8-inch square baking pan with cooking spray.
  • Prepare the crumble by combining flour, sugar, baking powder, and salt in a bowl. Use a pastry cutter or two forks to cut in cold butter until the mixture looks like coarse crumbs. Gently incorporate egg yolk and cold water until the dough is crumbly. Press half of the crumble mixture into the pan for the crust and save the other half for topping later.
  • Prepare the filling by gently mixing peach slices, sugar, flour, lemon juice, vanilla, cinnamon, and nutmeg in a bowl until fully incorporated. Spread the filling evenly over the crust, then generously sprinkle the remaining crumble mixture on top.
  • Bake in the preheated oven until beautifully golden and firm, for about 30 to 38 minutes. Once done, allow to cool to room temperature, then slice into 12 bars and serve.
