Savory sweet potato fries paired with house-made peach ketchup - a flavorful blend of peaches, brown sugar, vinegar, spices, and chili sauce.
Ingredients:
  • 1 bag (16 oz) frozen sliced peaches
  • 1 cup packed brown sugar
  • 1/2 cup cider vinegar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon sweet chili sauce
  • 3 medium sweet potatoes
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/4 teaspoon chili powder, if desired
Instructions:
  • Preheat oven to 425°F. In a medium saucepan, combine peaches, brown sugar, vinegar, pumpkin pie spice, and 1/2 teaspoon salt. Bring to a boil, then reduce heat and simmer for about 20 minutes until peaches are tender, stirring occasionally. Stir in chili sauce. Remove from heat and blend the peach mixture until smooth using an immersion blender or food processor.
  • Prepare the sweet potatoes by scrubbing them and peeling if preferred. Cut them into thin strips. Place the sweet potatoes in a large resealable plastic bag and add oil, 2 teaspoons of salt, pepper, and chili powder. Seal the bag and toss until the sweet potatoes are well coated. Spread the sweet potatoes in a single layer on an ungreased cookie sheet. Bake for 20 minutes or until they are tender on the inside and slightly browned on the outside.
  • Enjoy peach ketchup warm or at room temperature alongside sweet potato fries.
