Lemon and herb schnitzel burger

Delicious schnitzel burgers: lemon-herb marinated, slaw-topped, on a brioche bun.
Ingredients:
  • 4 slices day-old White Sourdough Vienna*, crusts removed, torn
  • 4 Australian Chicken Breast Steaks with Lemon & Herb Marinade
  • Olive oil, to shallow-fry
  • 1/2 x 400g pkt Ranch Slaw Kit
  • 4 Brioche Burger Buns, split, toasted
Instructions:
  • Pulse bread in food processor until finely crumbled. Press chicken firmly into breadcrumbs to coat thoroughly.
  • Pour enough oil into a large deep frying pan to reach 1cm up the side. Heat over medium heat. Cook chicken in batches for 3-4 minutes on each side until golden brown and fully cooked. Place on a plate lined with paper towel to drain.
  • Prepare slaw kit with half of the dressing sachet according to the package instructions, saving the rest of the dressing for later.
  • Spoon slaw over bun bases. Add chicken on top and drizzle with reserved dressing. Place roll tops on top and serve right away.
