Chicken and basil toasties

Transform store-bought barbecue chicken into delicious and effortless toasties.
Ingredients:
  • 8 slices sourdough bread
  • 99.00 gm basil pesto
  • 30g baby rocket
  • 250.00 ml semi-dried tomatoes, drained
  • 375.00 ml shredded barbecued chicken
  • 170g bocconcini cheese, thinly sliced
Instructions:
  • Preheat the grill until it's sizzling hot. Toast the bread for about 3 minutes on each side until beautifully golden. Brush the bread generously with oil. Spread one side of each slice with flavorful pesto.
  • Arrange peppery rocket, sun-kissed semi-dried tomatoes, and succulent chicken on a bed of 6 slices of bread. Sprinkle the chicken with a pinch of salt and a generous grind of black pepper.
  • Place the bocconcini on the chicken and cover with the remaining slices of bread, pesto side facing down. Cut each sandwich in half and serve right away.
