Smoked chicken and basil microwave risotto

Simplify risotto with our quick cheat method.
Ingredients:
  • 1 leek, trimmed, thinly sliced
  • 2 garlic cloves, finely chopped
  • 295g (1 1/3 cups) arborio rice
  • 80ml (1/3 cup) white wine
  • 875ml (3 1/2 cups) water
  • 2 x 28g salt reduced chicken style liquid stock
  • 280g smoked chicken breast, thinly sliced
  • 80g (1/2 cup) frozen peas
  • 125.00 ml fresh basil leaves, torn
  • 70g (1 cup) finely grated parmesan
Instructions:
  • In a microwave-safe bowl, mix leek, garlic, and oil. Microwave on high for 1 1/2 minutes. Add rice and wine, then microwave for an additional 30 seconds.
  • Combine water and stock, then microwave on high for 10 minutes. Stir until the stock dissolves, then add the chicken and microwave on high for 8 minutes.
  • Gently fold in the peas, basil, and three-quarters of the Parmesan cheese. Cover and let sit for 3 minutes until the peas are tender. Season to taste, then portion into bowls and sprinkle with the remaining Parmesan cheese. Enjoy!
