Turn leftover rice and BBQ chicken into delicious fried rice.
Ingredients:
  • Olive oil cooking spray
  • 1 large red onion, cut into thin wedges
  • 875.00 ml skinless shredded barbecued chicken (see note)
  • 300g carrot
  • 600.00 gm doongara long-grain rice, cooked, cooled
  • 100g snow peas, trimmed, thinly sliced lengthways
  • 375.00 ml beansprouts, trimmed
  • 42.00 gm soy sauce
  • 82.50 ml shredded fresh basil leaves
Instructions:
  • Preheat a wok over medium-high heat. Oil the onion lightly, and stir-fry for 1 minute. Add the chicken and carrot, then stir-fry for 1 to 2 minutes until heated through.
  • Combine rice, snow peas, and bean sprouts in the pan. Stir-fry for 1 to 2 minutes until warmed through. Incorporate soy sauce and garlic, then mix well. Off the heat, add basil and stir. Serve hot.
