Tender fried chicken with tomato-basil sauce, melted mozzarella cheese, served with rice pilaf and green salad. Ultimate comfort food!
Ingredients:
  • 1 cup all-purpose flour
  • 1 egg
  • 1 cup panko bread crumbs
  • 2 tablespoons olive oil, or as needed
  • 1 pound chicken tenders
  • 2 tablespoons olive oil
  • 15 cherry tomatoes, halved
  • 4 cloves garlic, chopped
  • 10 fresh basil leaves
  • 4 slices of fresh mozzarella cheese, or as needed - cut in half
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Combine flour, 1 1/2 teaspoons of salt, 1 teaspoon of black pepper, and cayenne pepper in a bowl. Beat the egg in a separate shallow bowl and put panko crumbs in a third bowl.
  • In a skillet over medium heat, warm up 2 tablespoons of olive oil. Coat each chicken tender with seasoned flour, dip in egg, and coat with panko crumbs. Fry the chicken tenders until golden brown on both sides, around 4 minutes per side. Move the chicken to a baking sheet.
  • In a skillet over medium heat, stir in tomatoes, garlic, basil, onion, a pinch of salt, and black pepper with 2 additional tablespoons of olive oil. Simmer the sauce until thickened for about 10 minutes, stirring frequently. Spoon a tablespoon of sauce over each chicken piece and add half a slice of mozzarella on top.
  • Bake in the hot oven until the cheese is melted and bubbly, about 8 to 10 minutes.
