Succulent lemon butter chicken with crispy bacon and earthy mushrooms in a savory sauce over pasta, topped with tangy capers and artichoke hearts.
Ingredients:
  • 1 cup butter, chilled
  • 0.25 cup white wine
  • 5 tablespoons fresh lemon juice
  • 5 tablespoons heavy cream
  • 0.5 pound dry farfalle (bow tie) pasta
  • 4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
  • 1 tablespoon butter
  • 0.25 cup all-purpose flour
  • 4 ounces bacon
  • 6 ounces mushrooms, sliced
  • 6 ounces artichoke hearts, drained and halved
  • 2 teaspoons capers, drained
  • chopped fresh parsley for garnish
Instructions:
  • Prepare a delightful sauce by gently heating wine and lemon juice in a saucepan. Allow the liquid to reduce by 1/3. Next, add cream and simmer until thickened. Gradually incorporate butter, one tablespoon at a time. Season the sauce with salt and pepper to taste. Keep warm until ready to serve.
  • 1. Boil a pot of generously salted water. Cook pasta until al dente, about 8 to 10 minutes. Drain and reserve.
  • Heat oil and butter in a large skillet over medium heat. Combine flour, salt, and pepper in a bowl. Coat chicken with the flour mixture. Place chicken in the hot oil without crowding, frying until golden brown and cooked through on both sides. Transfer chicken to paper towels. Add bacon, mushrooms, artichokes, and capers to the skillet, cooking until mushrooms are soft.
  • Dice the chicken breasts into small strips and add them back to the skillet. Mix in half of the delicious lemon butter sauce with the chicken.
  • Place the pasta in a large bowl, stir in the chicken mixture, and adjust seasonings to taste. Add more lemon butter sauce if desired, toss well, and garnish with parsley before serving.
