Delicious Thai basil fried rice with spicy chicken, bell pepper, and aromatic flavors of garlic and fish sauce.
Ingredients:
  • 3 tablespoons oyster sauce
  • 2 tablespoons fish sauce
  • 1 teaspoon white sugar
  • 0.5 cup peanut oil for frying
  • 6 large cloves garlic clove, crushed
  • 2 serrano peppers, crushed
  • 1 pound boneless, skinless chicken breast, cut into thin strips
  • 1 red bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 4 cups cooked jasmine rice, chilled
  • 2 cups sweet Thai basil
  • 1 cucumber, sliced
  • 0.5 cup cilantro sprigs
Instructions:
  • Assemble all the ingredients needed.
  • Combine the flavors of oyster sauce, fish sauce, and sugar in a small bowl, creating a delectable sauce; leave it aside for later use.
  • Heat oil in a sizzling wok until smoking. Quickly stir in garlic and Serrano peppers.
  • Combine the chicken, bell pepper, onion, and oyster sauce mixture in the pan; cook until the chicken is fully cooked and juices run clear.
  • Turn up the heat to high and swiftly mix in the cold rice until the sauce is fully incorporated. Break apart any clumps of rice with the back of a spoon.
  • Take the wok off the heat, mix in fresh basil leaves, and top it off with sliced cucumber and cilantro for a beautiful finish.
