Spice up your week with this quick and easy stir fry!
Ingredients:
  • 36.40 gm peanut oil
  • 87.50 gm Thai red curry paste
  • 650g chicken breast fillets, trimmed, thinly sliced
  • 24.40 gm fish sauce
  • 21.00 gm lime juice
  • 200g green beans, trimmed, cut into 5cm pieces
  • 82.50 ml roasted cashews
  • 125.00 ml basil leaves
  • steamed jasmine rice, to serve
Instructions:
  • 1. Heat oil in a wok until sizzling. Add curry paste and stir until fragrant. Toss in chicken and cook until just done. Incorporate sugar, fish sauce, lime juice, and beans; stir-fry until beans are tender and chicken is fully cooked.
  • Mix in the crunchy cashews and fragrant basil. Serve alongside fluffy steamed jasmine rice.
