Chef John's Thai basil chicken: Succulent chicken thighs with basil in a flavorful caramelized sauce.
Ingredients:
  • 0.33333334326744 cup chicken broth
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce, or as needed
  • 2 teaspoons fish sauce
  • 1 teaspoon white sugar
  • 1 teaspoon brown sugar
  • 2 tablespoons vegetable oil
  • 1 pound skinless, boneless chicken thighs, coarsely chopped
  • 0.25 cup sliced shallots
  • 4 cloves garlic, minced
  • 2 tablespoons minced Thai chilies, Serrano, or other hot pepper
  • 1 cup very thinly sliced fresh basil leaves
  • 2 cups hot cooked rice
Instructions:
  • Prepare all your fresh and flavorful ingredients.
  • Combine chicken broth, oyster sauce, soy sauce, fish sauce, white sugar, and brown sugar in a bowl and whisk until fully blended.
  • In a hot skillet, drizzle some oil and stir fry the chicken until it no longer looks raw, about 2 to 3 minutes.
  • Add shallots, garlic, and sliced chilies to the pan and stir well. Cook over high heat until the juices start to caramelize, about 2-3 minutes.
  • Pour a luscious tablespoon of the sauce into the skillet; sauté and stir until the sauce starts to caramelize, approximately 1 minute.
  • Pour the remaining sauce into the pan. Cook and stir until the sauce has deglazed the pan. Continue cooking until the sauce coats the meat, for about 1 to 2 minutes. Remove from heat.
  • Add fresh basil to the dish and continue cooking, stirring gently until the basil is just wilted, approximately 20 seconds. Serve alongside a bed of fluffy rice.
  • Serve and savor the dish while it's still hot!
