Satisfy your Thai food cravings with this speedy spicy Thai basil chicken recipe ready in just 30 minutes.
Ingredients:
  • 2 tablespoons vegetable oil
  • 2.5 pounds chicken, cut into bite-sized pieces
  • 0.25 cup chopped white onion
  • 2 cloves garlic, minced
  • 1 (13.5 ounce) can unsweetened coconut milk
  • 0.66666668653488 cup white sugar
  • 0.5 cup diced jarred jalapeno peppers (such as Mt. Olive®)
  • 0.25 cup rice vinegar
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground turmeric
  • 0.25 cup chopped Thai basil
Instructions:
  • In a hot skillet, saute chicken, onion, and garlic in vegetable oil until chicken is cooked through, approximately 6 minutes.
  • In a bowl, blend together coconut milk, sugar, diced jalapenos, rice vinegar, salt, and turmeric until well mixed.
  • Lower the heat to medium, then add the coconut mixture to the pan with the chicken. Let it simmer and thicken on low heat for about 6 minutes until the chicken is fully cooked. Finally, take the pan off the heat and gently fold in the fresh basil.
