Ingredients:
  • 300g rice
  • 48.80 gm fish sauce
  • 42.00 gm lime juice
  • 16.00 gm brown sugar
  • 36.40 gm peanut oil
  • 200g green beans, cut into 3
  • 3 garlic cloves, thinly sliced
  • 1-2 birdseye chillies, thinly sliced, plus extra to serve
  • 2 green onions, shredded
  • 500g chicken mince
  • 250.00 ml Thai basil leaves, plus extra to serve
  • 6 eggs
Instructions:
  • Prepare the SunRice brown medium grain rice according to package instructions, then allow it to cool completely.
  • Mix together the fish sauce, lime juice, and sugar in a jug until the sugar dissolves.
  • In a large frying pan or wok over medium high heat, warm 2 teaspoons of oil. Stir-fry the beans for 3 minutes until lightly charred and tender. Set aside. In the same pan, heat 1 tablespoon of oil over medium heat. Stir-fry the garlic, chili, and onion for 1 minute until fragrant. Add the chicken and stir-fry over high heat for 3-4 minutes until cooked through. Return the beans to the pan with the rice and fish sauce mixture. Stir-fry for 2-3 minutes until heated through. Finally, stir in the basil before serving.
  • Heat the remaining oil in a large frying pan over medium heat. Cook the eggs for 2-3 minutes until the whites are set. Serve the fried rice topped with eggs, extra chili, and basil for extra flavor.
