10-minute tangy white barbecue chicken sandwiches with pickles.
Ingredients:
  • 1 cup light mayonnaise
  • 3/4 cup cider vinegar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon freshly ground black pepper
  • 1/4 teaspoon ground red pepper (cayenne)
  • 6 hamburger buns, split
  • 2 cups angel hair coleslaw (from 16-oz bag)
  • 3 cups shredded deli rotisserie chicken (from 2-lb chicken)
  • 12 hamburger dill pickle slices
Instructions:
  • Combine mayonnaise, vinegar, lemon juice, black pepper, and red pepper in a small bowl using a wire whisk.
  • Spread a generous layer of 1/3 cup coleslaw, 1/2 cup chicken, 2 tablespoons white barbecue sauce, and 2 pickle slices on each bottom bun, then top with the remaining bun halves. Store any extra white barbecue sauce in a covered container in the refrigerator for up to 1 week.
