Barbecue whole chicken: simple, delicious family meal in 3 steps! Great value.
Ingredients:
  • 80ml (1/3 cup) olive oil
  • 60ml (1/4 cup) white wine
  • 42.00 gm fresh lemon juice
  • 20.00 ml chopped fresh continental parsley
  • 20.00 ml dried oregano
  • 2 tsp chopped fresh rosemary
  • 1/2 tsp dried chilli
  • Size 16 (about 1.65kg) chicken
  • Continental parsley sprigs, to serve
  • Lemon wedges, to serve
Instructions:
  • Prepare the flavorful marinade by mixing olive oil, wine, lemon juice, parsley, oregano, rosemary, and chili in a spacious bowl.
  • Get the chicken ready: Wash the chicken inside and out, then dry it with a paper towel. Lay the chicken flat on your work surface, breast-side up. Use poultry shears or sharp scissors to cut the breast in half along the breastbone and open it flat. Cut along both sides of the backbone and discard it. Marinate the chicken, then chill it for 4 hours or overnight. Drain the chicken, saving the marinade. Season the chicken with salt and pepper.
  • Prepare the grill: Preheat a barbecue grill or chargrill over high heat, then lower to medium. Grill the chicken, starting with the skin-side down, basting periodically with marinade for 40 minutes or until juices run clear when the thickest part is pierced with a skewer. Cut the chicken, place on a platter, garnish with continental parsley sprigs, and serve with lemon wedges.
