Indulge in a delicious BBQ chicken biscuit topped with honey Dijon lettuce slaw.
Ingredients:
  • 1 1/2 cups Original Bisquick™ baking mix
  • 2 tablespoons plus 1 teaspoon honey Dijon mustard
  • 3 cups shredded deli rotisserie chicken
  • 3/4 cup barbecue sauce
  • 2 tablespoons mayonnaise
  • 2 cups shredded leaf lettuce
  • 3/4 cup sliced mini multicolored bell peppers
Instructions:
  • Preheat oven to 425°F and generously spray a cookie sheet with cooking spray.
  • Combine Bisquick™ mix, milk, 2 tablespoons of mustard, and cheese in a large bowl until a soft dough forms. Spread the dough onto a cookie sheet, shaping it into a 7x5-inch rectangle. Cut the dough in half lengthwise and then into thirds on the long sides without separating it.
  • Bake until golden brown, around 10-12 minutes. Allow to cool for 5 minutes before slicing.
  • In a medium microwavable bowl, combine chicken and barbecue sauce. Microwave uncovered on High for 3 to 4 minutes until heated through.
  • Combine mayonnaise with the remaining mustard in a medium bowl. Toss in the lettuce and bell peppers, gently mixing everything together.
  • Separate the biscuit rectangles along the cut lines and slice each biscuit in half. Place the bottom halves on a plate, then generously top each with 1/2 cup of chicken and 1/3 cup of lettuce slaw before covering with the biscuit tops.
