Moist banana bread coffee cake perfect for any day. Ideal for breakfast or snack with sliced bananas.
Ingredients:
  • 2 to 3 large ripe bananas, mashed (about 1 1/3 cups), plus 1 large banana, sliced
  • 2/3 cup granulated sugar
  • 1/4 cup milk
  • 3 tablespoons vegetable oil
  • 1 teaspoon ground cinnamon
  • 2 2/3 cups Original Bisquick™ mix
  • 3/4 cup chopped walnuts or pecans
  • 1 cup Original Bisquick™ mix
  • 1/2 cup chopped walnuts or pecans
  • 6 tablespoons butter, cut into small pieces
  • Maple syrup
Instructions:
  • Preheat your oven to 350°F and generously grease a 13x9-inch pan with shortening or cooking spray.
  • Combine the mashed bananas, granulated sugar, milk, oil, cinnamon, and eggs in a large bowl. Mix in 2 2/3 cups of Bisquick mix and 3/4 cup of walnuts, then gently fold in banana slices. Transfer the mixture to a pan.
  • Combine Streusel ingredients in a medium bowl, working the butter in with a pastry blender or fork until a crumbly mixture forms. Sprinkle it over the mixture in the pan.
  • Bake for 30 to 36 minutes, or until a knife inserted in the center comes out clean. Cut into 4 rows by 3 rows and drizzle with maple syrup right before serving.
  • Prepare the dish following steps 1 to 3. Cover and store in the refrigerator for up to 12 hours. Remove cover and proceed with baking according to step 4.
