Ingredients:
  • 8 flour tortillas
  • 600g beef rump steak, trimmed
  • olive oil cooking spray
  • 2 medium tomatoes, finely chopped
  • 1 small avocado, finely chopped
  • 125g can kidney beans, drained, rinsed
  • 20.00 ml finely chopped fresh coriander leaves
  • 21.00 gm lime juice
  • 50g baby spinach
  • 2.50 gm sweet paprika
  • 1/2 tsp ground coriander
  • 1.25 gm ground cumin
  • 1/4 tsp chilli powder
  • 1/4 tsp cracked black pepper
  • 1.20 gm sea salt
  • 1/4 tsp dried oregano
Instructions:
  • Marinate steak in a large glass or ceramic dish. Prepare the Mexican spice mix by blending paprika, coriander, cumin, chilli powder, pepper, salt, and oregano in a bowl. Season both sides of the steak with the spice mix, gently massaging it into the meat. Grease a barbecue plate or chargrill and heat over medium-high heat. Grill steak for 3 to 4 minutes per side for medium doneness or to your preference. Rest the steak on a plate covered for 5 minutes before slicing thinly.
  • Combine diced tomato, creamy avocado, hearty beans, fresh coriander, and zesty lime juice in a bowl. Season generously with salt and pepper, then mix gently to blend all flavors.
  • Follow packet directions to heat tortillas. Place one tortilla on a chopping board and layer with spinach, steak, and tomato mixture. Fold the tortilla to enclose the filling. Repeat with the rest of the tortillas, spinach, steak, and tomato mixture. Serve and enjoy!
