Spicy chipotle chili-bean filling wrapped in a cheesy tortilla for a satisfying meal.
Ingredients:
  • 1 large onion, chopped (1 cup)
  • 6 garlic cloves, finely chopped
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed and mashed
  • 1 teaspoon finely chopped chipotle chilies in adobo sauce, drained
  • 4 fat-free flour tortillas (6 to 8 inches in diameter)
  • 1/2 cup shredded reduced-fat mozzarella cheese (2 oz)
  • 1 large tomato, chopped (1 cup)
Instructions:
  • Prepare your 10-inch skillet by spraying it with cooking spray and heating it over medium heat. Sauté the onion and garlic in the skillet for about 5 minutes, stirring occasionally, until the onion is tender but not browned. Add the beans and chilies, and cook until heated through.
  • Divide the bean mixture evenly onto the center of each tortilla, then sprinkle with cheese and tomato.
  • Fold one end of the tortilla over the filling by about 1 inch. Fold the right and left sides over the folded end, overlapping them. Fold the remaining end down and place the burrito seam side down on a serving platter or plate.
