Cozy up with a flavorful New Mexican green chile chicken stew, packed with veggies for a satisfying meal in cold weather.
Ingredients:
  • 3 chicken breasts, cubed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 medium potatoes, chopped
  • 3 (14.5 ounce) cans chicken broth
  • 12 large Hatch green chile peppers, diced
  • 2 large zucchini, sliced
  • 2 carrots, cut into pieces
  • 1 teaspoon salt
  • 1 (15.25 ounce) can whole kernel corn, drained
Instructions:
  • In a large, heavy saucepan, heat the oil over medium heat. Brown the chicken for about 3 minutes, stirring occasionally. Next, add potatoes and onion, cooking until browned for 3 to 5 minutes. Then, mix in broth, green chiles, zucchini, carrots, salt, and garlic salt. Bring to a boil; then reduce heat to simmer until vegetables are tender, around 1 hour. Finally, add corn and simmer for an additional 10 to 15 minutes until heated through.
