Elevate meatloaf with New Mexican heat from jalapeno ketchup and green chiles.
Ingredients:
  • 1 cup chicken-flavored stuffing mix
  • 1.5 (4 ounce) cans chopped green chilies
  • 0.5 cup diced yellow onion
  • 1 large egg
  • 1 tablespoon jalapeno ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 0.75 teaspoon salt
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon black pepper
  • 0.5 cup jalapeno ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon red wine vinegar
Instructions:
  • Preheat your oven to 350°F (175°C) for a perfect start to your dish.
  • Combine ground beef, stuffing mix, milk, green chiles, onion, egg, jalapeno ketchup, Worcestershire sauce, parsley, salt, garlic powder, and pepper in a bowl. Mix until fully incorporated. Shape into a loaf and transfer to a baking dish.
  • Combine the jalapeno ketchup, brown sugar, and vinegar in a bowl to create a flavorful glaze. Spread the mixture evenly over the meatloaf.
  • Roast in the preheated oven until fully cooked, for about 55 minutes. Use an instant-read thermometer to ensure the center reaches at least 160 degrees F (70 degrees C). Rest for 10 minutes before slicing and serving.
