Muffin-Tin Green Chile Meatloaves

Green chile cheeseburger meatloaf muffins topped with a fresh salsa.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 2 cans (4 oz) Old El Paso™ Chopped Green Chiles
  • 1/2 cup shredded Mexican blend cheese (2 oz)
  • 1/2 cup finely crushed tortilla chips (about 2 oz)
  • 1 tablespoon from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 2 tablespoons finely chopped fresh cilantro leaves
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt
Instructions:
  • Preheat oven to 450°F and generously coat 12 regular-size muffin cups with cooking spray.
  • Mix Meat Loaf ingredients in a large bowl until fully combined. Press mixture evenly into muffin cups.
  • Bake until the meat thermometer reads 160°F when inserted in the center of the loaf, for about 15 to 18 minutes.
  • In a small bowl, combine the Tomato Salsa ingredients. Enjoy with the meat loaves.
