Muffin Tin Cheesy Potato Gratins

Scalloped potato stacks: Thin potato slices, cheese, and cream in muffin tins - a perfect side for any meal!
Ingredients:
  • 3 medium russet potatoes, washed, thinly sliced
  • Salt
  • Pepper
  • 8 tablespoons (1/2 cup) shredded Colby-Monterey Jack cheese blend (2 oz)
  • 12 tablespoons (3/4 cup) whipping cream
  • Parsley flakes, if desired
Instructions:
  • Preheat oven to 400°F and generously coat a 12-cup muffin tin with cooking spray.
  • Place potato slices in a large bowl and generously season with salt and pepper, tossing to coat evenly.
  • - Place 2 potato slices in each muffin cup. - Sprinkle 1/2 tablespoon of cheese into each cup. - Add 2 more potato slices to each cup. - Add 2 more potato slices and another 1/2 tablespoon of cheese to each cup. - Top each cup with a final layer of 2 potato slices. - Pour 1 tablespoon of cream over each.
  • Bake for 30-35 minutes until potatoes are golden brown and tender. Allow to cool slightly, then carefully invert the pan onto a plate to release the gratins. Sprinkle with parsley before serving.
