Muffin-Tin Italian Sausage Pizzas

Mini meaty, cheesy pizza cups perfect for parties or lunch.
Ingredients:
  • 1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust
  • 1 tablespoon olive oil
  • 1/4 lb mild Italian sausage
  • 1/2 cup diced red onion
  • 1/4 teaspoon salt
  • 1 package (8 oz) sliced mushrooms
  • 1 cup Muir Glen™ organic pizza sauce (from 15-oz can)
  • 2 cups shredded mozzarella cheese (8 oz)
  • 1 tablespoon chopped fresh basil leaves
Instructions:
  • Preheat oven to 425°F. Grease 12 regular-size muffin cups with cooking spray. Cut the rolled dough into 12 pieces; place each piece in a muffin cup. Allow to rest for 15 minutes.
  • In a 10-inch nonstick skillet, warm the oil over medium heat. Saute the sausage for 5 to 6 minutes until fully cooked. Transfer the sausage to a small bowl using a slotted spoon.
  • In a skillet, sauté onions with salt in oil until softened. Add mushrooms and cook on medium-high heat until browned and they release liquid. Remove from heat.
  • Mix in the cooked sausage and 1/2 cup of pizza sauce. Allow to cool for 5 minutes, then fold in 1 1/2 cups of cheese.
  • Press the pizza dough firmly into cup shapes and distribute the sausage mixture evenly among them.
  • Bake for 11 to 14 minutes until the crusts are golden brown. Sprinkle with the remaining 1/2 cup of cheese. Allow to rest for 1 minute, then carefully release each cup with a knife. Warm the rest of the pizza sauce and drizzle over the cups. Garnish with basil before serving.
