Cheesy garlic potatoes au gratin in muffin tins, great for entertaining.
Ingredients:
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 0.75 cup milk
  • 0.5 cup freshly grated Parmesan cheese
  • salt and ground black pepper to taste
  • 2 large potatoes, peeled and thinly sliced
Instructions:
  • Heat your oven to 400 degrees F (200 degrees C) and generously grease 12 muffin cups with cooking spray.
  • In a saucepan over medium heat, melt butter until sizzling. Stir in garlic until fragrant, for about 1 minute. Add flour and cook until mixture becomes smooth and thick, around 2 minutes.
  • Gradually pour in the milk while whisking constantly until the sauce becomes smooth and thick, for about 5 minutes. Remove the saucepan from heat and stir in the Parmesan cheese until it melts. Season with salt and pepper, then set the cheese sauce aside.
  • Evenly distribute the potatoes among the muffin cups, then generously spoon the delicious cheese sauce on top of the potatoes.
  • Bake in the preheated oven for about 25 minutes, or until the potatoes are tender and a paring knife easily inserts into the center.
