Upgrade your breakfast game with irresistible Tater Tot™ breakfast muffins packed with eggs, sausage, and potatoes.
Ingredients:
  • 12 dozen frozen mini Tater Tots™ potatoes (about 6 cups) from 28-oz bag (144 nuggets)
  • 1 cup shredded sharp Cheddar cheese (4 oz)
  • 1/4 cup milk
  • 4 eggs, slightly beaten
  • 1/4 teaspoon salt
  • 1/2 lb bulk breakfast sausage
  • 1/2 cup diced onion
Instructions:
  • Preheat the oven to 400°F. Line 12 regular-size muffin cups with foil baking cups and spray them with cooking spray.
  • In each muffin cup, add 6 frozen mini Tater Tots™ and bake for 30 minutes. After baking, cool for 5 minutes. Use 2 paper towels to gently press the potatoes into cups to create a base. Sprinkle cheese evenly over the potatoes in each muffin cup.
  • In a small bowl, combine milk, eggs, and salt; set aside.
  • In a 10-inch nonstick skillet, sauté sausage and onion over medium-high heat for 5 to 7 minutes until nicely browned, stirring occasionally. Let cool for 2 minutes, then distribute evenly over the Tater Tots™ in each muffin cup.
  • Evenly distribute the egg mixture on top of the sausage mixture.
  • Add 6 more Tater Tots™ on top of each cup and lightly press them into the mixture. Bake for 32 to 34 minutes until the mixture is set and the Tater Tots™ are golden brown. Allow to cool for 15 minutes before serving.
