Spicy green beans with garlic, onion, tomatoes, and chiles - perfect with meatloaf!
Ingredients:
  • 2 tablespoons olive oil, divided, or more to taste
  • 0.25 onion, grated
  • salt to taste
  • 1 pound fresh green beans, trimmed and snapped
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 0.25 cup chicken broth
  • 1 clove elephant garlic, grated
Instructions:
  • Drizzle a lush 1/2 tablespoon of olive oil in a pan over gentle heat. Toss in onion with a pinch of salt; cook until beautifully translucent for 3 to 5 minutes. Introduce green beans, tomatoes and their juices, chicken broth, and garlic. Bump up the heat to medium-high and gently simmer until just 2 to 3 tablespoons of liquid remain, for up to 15 minutes. Finish with a luxurious drizzle of the remaining olive oil.
