Grandma's classic spicy pickled green beans recipe - a nostalgic favorite with a kick!
Ingredients:
  • 6 cups water
  • 1 cup pickling salt
  • 6 cups distilled white vinegar
  • 8 heads fresh dill weed
  • 0.5 cup pickling spice
  • 0.5 cup mustard seed
  • 8 dried red chile peppers
  • 16 cloves garlic, peeled
  • 1 teaspoon alum
  • 5 pounds fresh green beans, rinsed and trimmed
Instructions:
  • Place 8 (1 pint) jars in a pot of boiling water and let them sterilize for at least 5 minutes.
  • In a large pot, bring water, pickling salt, and vinegar to a boil. Once boiling, simmer over low heat while you pack the jars.
  • Place these ingredients in each jar: 1 head of dill, 1 tablespoon pickling spice, 1 tablespoon mustard seed, 1 dried chile pepper, 2 cloves of garlic, and 1/8 teaspoon alum. Stand beans upright in the jars, packing them tightly.
  • Carefully pour the steaming brine into jars, making sure to leave 1/2 inch of headspace at the top. Secure the lids tightly onto the jars and immerse them in a hot water bath for 6 minutes to seal. Allow the flavors to develop by storing the jars for a minimum of 2 weeks before enjoying.
