Roasted green beans with homemade dill vinaigrette.
Ingredients:
  • 2 pounds fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 0.5 teaspoon coarse salt
  • 2 tablespoons red wine vinegar
  • 1.5 teaspoons Dijon mustard
  • 1 teaspoon white sugar
  • 0.5 teaspoon dried dill
  • 0.5 teaspoon coarse-ground black pepper
Instructions:
  • Preheat your oven to a toasty 450°F (230°C).
  • Toss green beans in a large bowl with 1 tablespoon olive oil and coarse salt until evenly coated.
  • Roast the green beans in the oven until tender, for approximately 20 minutes.
  • Combine 1 tablespoon each of olive oil, red wine vinegar, Dijon mustard, sugar, dill, and pepper in a bowl, then drizzle over the roasted green beans before serving.
