Try delicious roasted green beans topped with crispy pancetta.
Ingredients:
  • 4 oz thinly sliced pancetta, chopped
  • 2 lb fresh green beans, trimmed
  • 1 cup sliced sweet onion
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
Instructions:
  • Preheat oven to 450°F. Crisp up pancetta in an 8-inch nonstick skillet over medium-high heat. Remove to paper towels to drain and reserve the flavorful drippings.
  • Spread a delicious mix of green beans, onion, oil, salt, pepper, and reserved drippings in a 18x13-inch half-sheet pan.
  • Roast beans uncovered for 15 to 20 minutes, stirring occasionally, until tender. Finish by sprinkling with crispy pancetta.
