Oven-roasted green beans caramelized with balsamic vinegar, honey, thyme, and garlic, then tossed with walnuts for a flavorful twist.
Ingredients:
  • 1 pound green beans, stem ends snapped off
  • 1/2 medium yellow or red onion, cut into 1/2 inch thick wedges
  • 1 tablespoon extra virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon minced fresh thyme
  • 2 medium thin-sliced garlic cloves
  • 1/3 cup toasted chopped walnuts
Instructions:
  • Preheat your oven to 450°F, positioning the rack in the middle. Line a sheet pan with aluminum foil or a Silpat for easy cleanup.
  • Coat beans and onions with olive oil and salt, then roast: Spread them on a baking sheet, drizzle with olive oil, and toss to coat evenly. Sprinkle with 1/2 teaspoon of salt and distribute in an even layer. Roast at 450°F for 10 minutes.
  • Prepare the balsamic honey garlic mixture: Mix balsamic vinegar, honey, fresh thyme, and garlic slices in a small bowl as the beans roast.
  • Coat beans with balsamic honey: Once the beans and onions have roasted for 10 minutes, take them out of the oven. Drizzle the balsamic honey mixture over them and toss with tongs until evenly coated. Return to the oven and roast until onions and beans are dark golden brown in spots and beans have started to wrinkle, approximately 12 to 15 minutes more.
  • Season the dish with salt and pepper to your liking, then transfer it to a serving dish. Sprinkle with toasted chopped walnuts before serving.
