Create a savory side dish by roasting red potatoes with green beans, mushrooms, and carrots using dry onion soup mix for a flavorful shortcut. Perfect for busy weeknights.
Ingredients:
  • 1 (1 ounce) package dry onion soup mix (such as Lipton®)
  • 0.25 cup olive oil
  • 6 medium red potatoes, quartered
  • 0.5 pound fresh green beans, trimmed
  • 2 portobello mushroom caps, chopped
  • 0.5 cup matchstick carrots
Instructions:
  • Preheat the oven to 450°F (230°C) and generously grease a shallow baking dish.
  • Combine the soup mix and 1/4 cup of olive oil in a large zip-top bag. Toss in the potatoes until evenly coated, then transfer everything to the baking dish.
  • Roast uncovered in a preheated oven for 30 minutes. Add green beans and portobello mushrooms, then sprinkle in carrots and drizzle with the remaining 1 tablespoon of olive oil. Roast until beans and potatoes are tender, about 10 minutes more.
