Easy gluten-free steak salad with roasted potatoes, green beans and zesty dressing - a delicious last-minute meal.
Ingredients:
  • 650g chat potatoes, halved
  • 60ml olive oil
  • 2 garlic cloves, crushed
  • 300g thick beef sirloin steak
  • 300g thin green beans, trimmed, blanched, refreshed in cold water
  • 1 small red onion, thinly sliced
  • 100g cherry tomatoes, halved
  • 39.60 gm gluten-free mayonnaise
  • 20.00 ml red wine vinegar
  • 20.00 ml gluten-free horseradish cream
  • 20.00 ml chopped flat-leaf parsley leaves
Instructions:
  • Preheat your oven to a toasty 190°C. Mix potatoes with oil, salt, and pepper on a baking tray, then roast until tender, about 20-25 minutes.
  • In a dish, combine 1 tablespoon of oil with half of the garlic. Season the mixture, then add the steak and evenly coat it. Let it sit while you prepare the next steps.
  • Combine the green beans, red onion, and halved cherry tomatoes in a bowl.
  • Combine the mayonnaise, vinegar, horseradish, and the rest of the oil and garlic. Set aside.
  • Preheat a sizzling-hot chargrill. Sear steak for 2-3 minutes per side to your preferred doneness. Let it rest for 5 minutes, then thinly slice and mix with salad, roast potatoes, dressing, and parsley.
