Perfectly grilled steak: Choose top quality cut, air-dry, baste with herb butter sauce.
Ingredients:
  • For the steak:
  • 1 1/2-inch thick ribeye, bone in or out (about 1 1/2 lbs. without the bone)
  • 3/4 teaspoon coarse sea salt or kosher salt
  • 1 teaspoon freshly ground pepper
  • For the herb butter sauce:
  • 4 tablespoons butter
  • Leaves from 4 sprigs of thyme
  • 1 tablespoon minced fresh rosemary
  • 1 clove garlic, minced
  • 1 shallot, about half the size of a golf ball, minced
Instructions:
  • Prepare the ribeye: Trim off the outer layer of fat, keeping the flavorful marbling inside for a delicious steak.
  • Prepare and refrigerate the steak: Pat dry the steak with a paper towel to remove moisture for a perfect sear. Season both sides generously with salt and pepper, gently rubbing them in. Refrigerate the steak uncovered for at least 1 hour, or up to 48 hours.
  • Prepare the herbed butter: Combine butter, herbs, garlic, and shallots in a small saucepan. Melt over low heat. For optimal flavor infusion, prepare at least 10 minutes before grilling the steak. Alternatively, make it up to 2 hours in advance, refrigerate, and gently reheat before grilling the steaks.
  • Preheat the grill: For a charcoal grill, set up two-zone grilling with one half hot and the other warm. The grill is ready when you can only hold your hand over the hot zone for a second or two. If using a gas grill, preheat to 450°F with two burners for about 10 minutes, then reduce one burner to medium for two cooking zones.
  • Sear the steak on the hottest side of the grill for 2 minutes, then flip and baste with melted herb butter and herbs. Continue cooking for a total of 10 minutes, flipping and basting every 2 minutes, until the steak reaches your desired doneness. Transfer to a platter, let rest, and baste with butter before serving.
  • Allow the steak to rest for 5 minutes to let the flavors meld and the juices redistribute before serving.
