Ingredients:
  • 2 pounds 80/20 ground beef, cold
  • 4 cloves minced garlic
  • 2 tablespoons minced onion
  • 1 tablespoon Worcestershire sauce
  • 1 3/4 teaspoons freshly ground pepper
  • 1 1/2 teaspoons salt
  • 6 hamburger buns
  • Butter for buns
Instructions:
  • Prepare the burger mix: Place the chilled ground beef in a mixing bowl and evenly sprinkle all other ingredients on top. Gently fold the meat a few times for about 30 to 45 seconds until fully incorporated. Avoid overmixing.
  • Shape the burger patties on a tray: Line a tray with parchment paper, then divide the meat into 6 equal parts (about 5 1/4 ounces each). Gently form each portion into a patty that is 4 inches across with 1-inch sides and a shallow depression in the middle. Aim for the outer 1/2 inch to be slightly taller than the inside to prevent over-shrinking and puffing during grilling. Cover with plastic wrap and refrigerate while you prepare the grill and butter your buns.
  • Preheat the grill until it reaches a temperature of 450 to 500°F, or until it's hot enough that you can only hold your hand above the grill grates for about 1 second. Butter the insides of all the buns and place them close to the grill.
  • Grill the burgers on direct heat to your preferred doneness: rare (4 minutes, 125°F), medium-rare (5 minutes, 135°F), medium (6-7 minutes, 145°F), well-done (8-9 minutes, 160°F). Flip the burgers as desired, without pressing down on them.
  • Add the cheese to the burgers and place the buttered buns on the grill over indirect heat during the last minute of cooking.
  • Rest the burgers: Take the burgers and buns off the grill, then transfer them to a clean platter. Allow the burgers to rest for 1 minute before serving.
