Quick and delicious honey-garlic glazed chicken with roasted potatoes and green beans on one pan. Ready in under an hour!
Ingredients:
  • nonstick cooking spray
  • 3 tablespoons olive oil, divided
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced
  • 0.5 teaspoon dried oregano
  • 3 medium red potatoes, cut into 1-inch pieces
  • 1 (12 ounce) package frozen green beans
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and lightly coat a sheet pan with nonstick spray.
  • Whisk together 2 tablespoons of olive oil, melted butter, honey, brown sugar, Dijon mustard, garlic, oregano, and basil in a small bowl to create a flavorful glaze. Season with salt and pepper to taste.
  • Spread out the potatoes on half of the pan and lay the chicken on the other half. Drizzle the potatoes with 1 tablespoon of oil, then season both the chicken and potatoes with salt and pepper. Pour half of the glaze over the chicken. Keep the rest of the glaze for later.
  • After roasting in the center of the preheated oven for 20 minutes, remove it, adjust the oven rack to the top shelf, and turn on the broiler.
  • Combine green beans and the remaining glaze with the potatoes and stir gently until well mixed.
  • Broil until everything is caramelized and slightly charred, the potatoes are fork-tender, and the chicken is fully cooked, about 5 to 10 minutes. Check with an instant-read thermometer for a minimum internal temperature of 165 degrees F (74 degrees C).
