Crunchy walnut-infused baby spinach salad with a sweet, citrusy twist of honey, orange, and hint of cinnamon.
Ingredients:
  • 115g (1 cup) walnut pieces
  • 125ml (1/2 cup) fresh orange juice
  • 60ml (1/4 cup) olive oil
  • 28.60 gm honey
  • Pinch of ground cinnamon
  • 150g baby spinach leaves
Instructions:
  • Toast the walnuts in a medium saucepan over medium heat, stirring constantly, for 3 minutes or until they turn golden. Then, transfer them to a chopping board and roughly chop them.
  • Combine the tangy orange juice, fragrant oil, sweet honey, pungent garlic, and warming cinnamon in a small bowl. Adjust seasoning with a touch of salt and pepper to enhance the flavors.
  • Combine baby spinach and walnuts in a serving bowl. Drizzle with dressing and toss to coat. Serve.
