Avocado, spinach and walnut salad

Whip up a healthy avocado side salad with just four key ingredients.
Ingredients:
  • 13.80 gm roughly chopped walnuts
  • 200g baby spinach leaves
  • 1 ripe avocado, peeled, stone removed, sliced
  • Juice of 1 lemon
Instructions:
  • Toast walnuts in a small frying pan over medium heat, shaking often, until golden and roasted, about 3 to 4 minutes. Remove from heat.
  • Plate spinach and avocado elegantly, then generously scatter walnuts on top. Add a drizzle of fresh lemon juice and season with a pinch of salt and pepper before serving.
