Elevate your meal with a crisp and nourishing gluten-free summer salad.
Ingredients:
  • 60g baby spinach
  • 250g cherry tomatoes, quartered
  • 1 bunch mini asparagus, trimmed, halved lengthways
  • 28.75 gm chopped walnuts, toasted
  • 1 avocado, sliced
  • 42.00 gm lemon juice
  • 20.00 ml finely chopped fresh chives
Instructions:
  • Prepare a zesty Lemon and Chive Dressing by combining lemon juice, oil, and chives in a screw-top jar. Season with salt and pepper, then securely fasten the lid and shake vigorously until fully blended.
  • In a bowl, mix together spinach, tomato, asparagus, and walnuts. Add avocado and dressing, then gently toss to combine. Serve.
