Delicious roasted cauliflower paired with flavorful curried lentils and crispy beans for a comforting vegetarian dish.
Ingredients:
  • 500g cauliflower, cut into small florets
  • 18.20 gm olive oil
  • 1 large brown onion, chopped
  • 75g curry paste
  • 120g lentils
  • 500ml vegetable stock
  • 220g green beans, ends trimmed
  • 125.00 ml coriander sprigs
Instructions:
  • Preheat the oven to 200°C. Line a baking tray with parchment paper, then place the cauliflower on it. Give the cauliflower a quick spritz of olive oil spray, season to taste, and roast for 20 minutes until tender and golden.
  • In a medium saucepan, heat oil over medium heat. Sauté onion for 2-3 minutes until softened. Add curry paste, cook for another minute until fragrant. Stir in lentils and stock, bring to a boil, then simmer on low for 20 minutes until lentils are tender.
  • Combine beans with the lentil mixture and roasted cauliflower, stirring until the beans are tender. Garnish with fresh coriander, then season to taste.
