Roasted green beans with creamy garlic sauce - a fancy take on veggie dip.
Ingredients:
  • 1 medium head garlic
  • 1 teaspoon olive or vegetable oil
  • 1/2 teaspoon coarse sea salt
  • 2/3 cup mayonnaise or salad dressing
  • 2 bags (12 oz each) fresh whole green beans
  • 1 tablespoon olive or vegetable oil
  • 1 teaspoon coarse sea salt
Instructions:
  • Preheat the oven to 400°F. Slice the top off the garlic head to expose the cloves. Place the garlic head on a 7-inch square piece of foil. Drizzle 1 teaspoon of oil over the exposed cloves, sprinkle with 1/4 teaspoon of salt, then wrap the foil around the garlic head.
  • Roast garlic for 35 to 40 minutes until soft and golden brown. Allow to cool for 10 minutes before handling.
  • Separate roasted garlic cloves from skins and press them into a small bowl. Mix in mayonnaise and remaining 1/4 teaspoon salt until well combined. Refrigerate until serving.
  • Spread the green beans in a 15x10x1-inch pan. Drizzle with 1 tablespoon of oil and toss gently to coat. Sprinkle with 1/2 teaspoon of salt.
  • Roast the beans for 12-15 minutes, stirring halfway, until they are lightly browned. Transfer the beans to a serving platter and sprinkle with the remaining 1/2 teaspoon of salt. Serve the beans hot or cold with aioli alongside small tongs.
