Elevate French green beans with roasted garlic and tangy blue cheese for a delicious twist on a classic dish.
Ingredients:
  • 3 heads garlic, minced
  • salt and freshly ground pepper to taste
  • 1 pound fresh green beans, trimmed
  • 0.33333334326744 cup sliced almonds
  • 1 pinch cayenne pepper, or more to taste
  • 2 ounces crumbled blue cheese
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and elegantly line a baking dish with a shiny layer of aluminum foil.
  • Trim the top 1/3 off garlic heads to expose the cloves. Arrange the garlic cut side up in the baking dish. Drizzle with olive oil and sprinkle with salt. Seal the foil tightly to create a packet.
  • Roast in the preheated oven until the garlic clove is tender when pierced with a knife, for about 1 hour. Allow it to cool before peeling the cloves and saving the infused olive oil.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • 1. Boil a generous amount of salted water in a large pot. Add green beans and cook for 4 to 6 minutes until they turn bright green and are almost tender. Drain the beans and immediately transfer them to a bowl of ice water to cool down completely. Drain well and set aside.
  • In a large skillet over medium heat, melt butter until sizzling. Toss in almonds and sauté until beautifully golden, about 3 to 4 minutes, stirring occasionally.
  • Combine green beans, roasted garlic with reserved olive oil, toasted almonds, and 1 tablespoon olive oil in a large bowl. Season with cayenne pepper, salt, and black pepper. Transfer the mixture to a shallow baking dish and sprinkle blue cheese on top.
  • Bake for around 15 minutes until the cheese is gooey and the beans are perfectly tender.
