Buttery almond chicken tenderloins cooked in a skillet - a truly special dish.
Ingredients:
  • 1/4 cup all purpose flour
  • 1/2 teaspoon Herbes de Provence
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon ground black pepper, or to taste
  • 8 chicken tenderloins
  • 5 Tablespoons unsalted butter
  • 1/2 cup sliced raw almonds
  • 3 green onions, sliced, white and green parts separated
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1/2 cup chicken broth
Instructions:
  • In a large resealable plastic bag, combine flour, Herbes de Provence, salt, and pepper. Gently mix to distribute evenly. Add chicken tenderloins, seal the bag, and coat the chicken by tossing until evenly coated with the flour mixture.
  • In a large skillet over medium heat, sizzle the butter until melted. Add almonds and stir, cooking until lightly browned for about 3 minutes, making sure not to burn them.
  • Strain the skillet contents through a wire mesh sieve, keeping the almonds in the sieve and saving the butter in a heat-proof bowl. Clean the skillet with a paper towel and pour the butter back in, setting aside the almonds.
  • Add the floured and seasoned tenderloins to the hot butter and sear until golden brown on each side, about 3 to 4 minutes per side.
  • Sauté the white parts of the onions and minced garlic with the tenderloins in the skillet until fragrant, about 1 minute.
  • Gently surround tenderloins with white wine and chicken broth, cover, and simmer on low until the internal temperature of the chicken reaches 165°F (74°C) on an instant-read thermometer, for about 5 to 8 minutes. Place the chicken on a serving plate, keeping it warm.
  • Turn up the heat to medium. Once the liquid bubbles, add the almonds back to the skillet. Taste and adjust seasoning as needed, then simmer until the sauce slightly thickens, about 2 to 3 minutes. Enjoy!
  • Cover chicken tenderloins with a delicious blend of almonds and sauce. Top off with the vibrant sliced green onion tops for a fresh finish.
