Spicy pickled green beans with a zesty blend of crushed red pepper, garlic, cayenne, and dill in the brine for an extra kick.
Ingredients:
  • 2 cups apple cider vinegar
  • 2 cups water
  • 2 tablespoons pickling salt
  • 6 cloves garlic, crushed
  • 3 teaspoons dill seed
  • 1.5 teaspoons crushed red pepper
  • 0.75 teaspoon cayenne pepper
  • 2 pounds fresh green beans, trimmed
Instructions:
  • 1. Check three pint-sized jars for cracks and rust on the rings, dispose of any damaged ones. Place the jars on a rack and immerse them in a large pot of water. Bring the water to a vigorous boil, then lower the heat to keep the jars warm until you are prepared to fill them.
  • In a saucepan, blend together vinegar, water, and pickling salt until it reaches a boil.
  • Take out one empty jar from the canning pot. Add 2 garlic cloves, 1 teaspoon dill seed, 1/2 teaspoon crushed red pepper, and 1/4 teaspoon cayenne pepper into the jar. Fill the jar with green beans, leaving 1/2 inch of space from the top. Pour hot brine over beans, ensuring there is a 1/2 inch headspace. Remove air bubbles with a clean wooden chopstick. Add more beans if possible, then check headspace and top up with brine as needed. Repeat for the remaining two jars.
  • After wiping the jar rims, gently place the lids and bands on the jars and return them to the canning pot. Cover and bring back to a rolling boil. Process for 10 minutes. Turn off the heat, uncover, and let jars sit in the cooling water for 5 minutes to seal properly.
  • Place the jars on a soft kitchen towel or wooden cutting board to cool completely before verifying the seals.
